Sourced by our friend and Guatemalan native Javier at Caribbean Goods (Glasgow). This month’s offering is a Fully Washed coffee comprising Bourbon, Caturra and Pache varietals.

Pache is a mutation of the more common Typica. It originated, in Guatemala, sometime in the 1940's. Since then, it has been planted in other Central American countries including El Salvador and Honduras.

A bit of a wonder coffee, Pache is a short and compact plant, yielding a lot of large cherries and beans. It has partial resistant to leaf rust and does not mind being planted close together, again, improving crop yield. If that wasn't enough Brownie Points, it also tastes good. Typically, medium body with balanced acidity and delicate flavours ranging from sweet and nutty to fruity and floral.

Geisha remains the most sought after (and expensive!) coffee in Central America but it's style and panache is in Pache too.
