The mountains of Matagalpa provide a unique microclimate for the farm that Ricardo Herrera as CEO and General Manager Marco Tulio Gonzalez can manage with a team of 50 permanent workers and an additional 400 seasonal pickers. Sr Herrera brings previous operations expertise from Colombia and Costa Rica whilst Sr Gonzalez obtained an MBA in industrial engineering to really bring another level of insight to the processing.
The coffee cherries are carefully hand-picked at peak ripeness to preserve flavor integrity. After harvesting, they are washed and fermented using a specially developed coffee-specific yeast, enhancing complexity and consistency. These meticulously crafted washed lots are known for their vibrant, tropical flavor notes—most notably a distinctive pineapple-like sweetness—making them stand out in the specialty coffee market.
